"Alright…it’s pretty fair to say we all have those snacks in our cupboard after a blow out party or a movie night, that will linger in the cupboard until you have an attack of the munchies. Sooooooo, I suggest grabbing all those lovely snacks and pop them in a cookie."

Makes: 20-24

Ingredients:

250g unsalted Butter

70g Light brown Sugar

70g Light Muscovado sugar

1 egg yolk

2 tsp Vanilla Bean paste

300g Plain Flour

1 tsp Fine sea salt

¼ tsp Bicarbonate Soda

Option 1:

150g Pretzels (Roughly chopped)

200g Brownie chunks (1 cm cubed )

Option 2:

240g Crispy M x Ms (Roughly Chopped)

Sweet n salted popcorn (Blitzed)

Method:

Line two baking trays with baking parchment and preheat oven to 180C/Gas Mark 4.

Cream the butter and both sugars in large bowl until light and fluffy, add the vanilla extract and mix again.

Sieve the flour, salt, and bicarbonate of soda into a separate bowl.

Add to the flour mixture to the butter mixture followed by the topping of option one or two.

Using an medium sized ice cream scooper, scoop out portions of the cookie dough onto your prepared baking trays then gently flatten each scoop and bake for 12-15 minutes.

Leave the cookies to cool on the baking trays then place on the wire rack.

Or do you know what? Add all four to one mix if you want - the more toppings the better, innit?
