First - don't just use water, PLEASE use stock. Your soup will taste like old socks without it. You don't need anything fancy, just a good old stock cube.

Another common mistake is simmering your soup for way too long. If you're making a chunky soup, make sure you only simmer until your veg is just about tender. No-one likes a mushy soup.

Similarly, if you want to make a silky-smooth soup, don't be tempted to turn off the heat too soon, or you'll end up with unwanted lumps.
